Mixed Berry Tart
The past few months have been extremely exhausting and busy. But, they have also been extremely rewarding and productive. With hardly a month left to graduate college, I have been left with no time to bake! However, I am running so behind on my blog posts, I do have this delicious mixed berry tart recipe from December!
I can't remember the last time a slice of pie didn't put a smile on my face. This pastry cream is beautifully rich and is flavoured with orange zest, that makes it a thousand times more delicious! For the pastry, you can refer to my Apple Pie recipe.
Ingredients:
For the filling
- 5 Egg Yolks
- ½ cup Plus 2 Tbsp of Sugar
- 2.5 Tbsp Cornstarch
- ½ tsp Vanilla Extract
- 1 ½ cups Scalded Milk (just below boiling point)
- Zest of 1 Large Orange
- 1 tsp Unsalted Butter
- Strawberries (halved) and blueberries (or any berries of your choice)
Method:
- 1) In a large bowl whisk together the egg yolks and sugar until thick and pale. Add the cornstarch and whisk to combine.
2) Slowly add in the milk and whisk to combine. Pour this batter into a saucepan and cook on low heat whisking constantly until the cream thickens. Once this mixture has thickened turn the heat off and add the orange zest and butter.
5) Pour the custard into a bowl and place a piece of plastic wrap directly on the custard and refrigerate until cold.
